Now that my children were on their own, and I had more time to reflect on my life, the idea of creating my own ‘wagashi’ from white lima beans suddenly came to me. 

My inspiration for the shapes and colors were influenced by the beautiful nature in Canada and a mixture of both Japanese and Canadian cultures.

Because each cake is made as I am moved by the natural beauty that surrounds me, each ‘nerikiri’ is and original Junko creation.
